Petty Knife
The Petty is the Japanese answer to the Western paring knife — compact, nimble, and extraordinarily precise. At 120–150mm, it handles all the close-up work that a larger chef's knife can't: peeling fruit, trimming herbs, segmenting citrus, and detailed prep work where control matters more than power.
Pairs beautifully with a Santoku or Gyuto as a second knife. Once you have one, you'll wonder how you managed without it.
